What is Thanksgiving without pie? In my humble opinion, a very boring Thanksgiving meal! And in my home there is nothing better than a delicious mince pie but I can hear the collective “Yuck” now!
Mince pie has definitely gotten a bad “rap” over the years. Perhaps it is due to the often used term mincemeat pie..which I must admit conjures up some pretty unpleasant thoughts. But I am here to confirm that there is not a speck of meat in the holiday version of a mince pie. Lots of raisins, apples, nuts and spices but no meat. Mince pie actually has an interesting history attached to it and you can learn more by visiting the Smuckers site.
There is nothing easier than making a mince pie and here is my favorite recipe that is sure to convert all those mince pie naysayers:
To your favorite homemade pie crust add:
a cup or more of tart cherries
¼ cup of brandy
Add the top crust and bake 30 minutes at 425 degrees.
Top with whipped cream and serve
And, for those who prefer a more traditional pie, here is a variation on the basic Pumpkin Pie.
Add 2 tablesppons of Amaretto liqueur to your favorite basic pumpkin pie recipe
Mix 20 Amaretto di Saronno cookies, crushed to ½” size, with ¼ c. sliced almonds. Sprinkle mixture onto pie just before baking.
Bake as directed.
